Kashmiri dum aloo How To Make Damalo

Kashmiri Dum Aloo is a very popular Kashmiri recipe. It is made using small baby potatoes. It does not use onions.

It is also known as Kashmiri royal potato curry. It is made using curd gravy using small potato and chilli powder, cumin powder, dried ginger powder (ginger) and anise powder, ginger, garlic and cardamom powder, nutmeg. .

Ingredients :-

  1. 10-12 small baby potatoes
  2. Oil – for frying potatoes
  3. 2 tbsp Oil
  4. 1 tbsp Ghee
  5. 1/2 tsp Cumin
  6. Pinch Asafoetida
  7. 1 A small palm leaf
  8. 2-3 peppercorns
  9. 2 Small cardamom (with husk)
  10. 1 A piece of cinnamon
  11. 1/2 tsp Chili
  12. 1 tbsp Garlic sauce
  13. 8-10 teaspoons radish yogurt
  14. Salt
  15. 1/2 tsp Less than turmeric
  16. 2 tbsp Chili (take more or less chili the way you eat it)
  17. 2 tbsp Fennel powder
  18. Pinch Nutmeg
  19. 1 tbsp Coriander
  20. 1 tbsp Hot spices
  21. 1/2 tsp Cumin powder
  22. 1 tbsp Ginger powder
  23. 2 tbsp Kasuri methi
  24. Chopped coriander
  25. 1 tbsp Besan (optional)

Steps on How to Create Kashmiri dum aloo

1. Wash the small potatoes properly. Put in the cooker and take 1 whistle. Peel a squash, grate it and squeeze the juice.

2. Fry nicely in oil till it gets a little cold.

3. Take the yogurt in a large bowl. Add salt, turmeric, chilli powder, coriander-cumin spice, ginger powder, anise powder, nutmeg powder, cumin powder and mix well in the curd.

4. Now, make small holes in the small potatoes with the help of a fork. And add it to the curd-spiced mix.

5. Mix well. And marinate for 15 to 20 minutes.

6. Now take the oil and ghee in a small cooker. When hot, add cumin. Add cumin seeds and asafoetida. Add a piece of cinnamon, tamal leaves, peppercorns, cardamom.

7. Now, add a little chili, garlic sauce. Add a little water.

8. Now, marinate the potatoes with spices in the curd, leaving all the 2-3 teaspoons of curd and add the rest to the cooker with the potatoes. Keep shaking.

9. Add 1 teaspoon besan to the remaining yoghurt. Doing this is optional. I grind, so that the vegetables thicken nicely. Now add it to the cooker. Shake well.

10. Add a little kasuri methi on top. Mix everything well, beat the cooker and whistle.

11. Hot vegetables Tasty vegetables are ready. Serve with naan, paratha, bhakri, rice, or biryani.
